Steelhead Veggie Bowl

Not all healthy recipes have to be complex and full of ingredients. This is a simple, weekly staple!

In my recipes, you will notice that I don’t provide super explicit measurement guidance. I am a big believer in portioning based on what feels right for you, and learning to experiment with your cooking. I don’t measure out spices for example - I season and taste as I go. It has helped me build my cooking confidence, and it will for you too!

  1. Preheat your oven to 375 degrees and begin to prepare your fish and vegetables.

  2. Slice your 1lb of Steelhead into two pieces. In a dish, marinate the Steelhead in 1 part coconut aminos, 1 part teriyaki, and top the fish with Trader Joe’s everything bagel seasoning. Let the fish marinate while preparing the broccoli.

  3. Cut the broccoli into florets, and then toss in olive oil, garlic, salt, and pepper. Roast the broccoli in the oven for about 20 - 25 minutes, or until cooked and crispy.

  4. Once the broccoli is cooking, start to cook the fish in a pan on the stove top. Sear the fish on either side for 3 - 4 minutes so that the top of the fish gets nice and crispy. Then place the fish in the pan into the oven to cook the rest of the way. Make sure the fish is fully cooked through before removing from the oven.

  5. When the fish and broccoli are about 10 minutes away from being done, begin the Right Rice.

  6. Everything should finish up close together! Once the broccoli is cooked to your liking, the fish is cooked fully through, and the Rice Rice is ready, it is time to plate! Pro tip: add a fresh drizzle of coconut aminos overtop the fish and Right Rice when it is done and plated.
