Mediterranean Spring Bowl
This is one of my go-to recipes and it usually makes an appearance every Follicular phase. It’s got enough flavors to make you feel like you’ve created something fancy, but it is quite simple!
In my recipes, you will notice that I don’t provide super explicit measurement guidance. I am a big believer in portioning based on what feels right for you, and learning to experiment with your cooking. I don’t measure out spices for example - I season and taste as I go. It has helped me build my cooking confidence, and it will for you too!

Ingredients
6-8 falafel balls (Trader Joe’s pre-cooked, frozen falafel)
1 head of broccoli, chopped
1 bunch of rainbow carrots (~8 carrots), shaved & sliced long ways
Goddess dressing (I love Primal Kitchen’s Green Goddess dressing)
Handful of pepitas
Handful of dried cherries
Mixed greens
Garlic (to taste, I season heavily)
Pinch of salt & pepper
Instructions
Preheat your oven to 400 degrees and begin to prepare your vegetables.
Shave the rainbow carrots, cut them into 2 -3 in sections, and then cut in half (or more, depending on size) length-wise. They will be long-ish strips! Toss the carrots in olive oil, garlic, salt, and pepper, and immediately put in the oven to roast. The carrots will take about 40 minutes, so you want them cooking before you start on anything else!
Cut your broccoli into bite-sized florets, and toss in olive oil, garlic, salt, and pepper. Add them to the oven with the carrots after the carrots have cooked for ~20-25 minutes and are starting to soften & crisp up.
Bring the oven down to 350 degrees when there are 10 minutes left on the carrots, and add the falafel balls to the oven.
Note that cooking times vary, but ultimately what you want to look for is soft, browning carrots, fully-cooked broccoli, and the falafel warm entirely throughout.
Now that everything is cooked, combine your bowl! Here is what I recommend: fill your bowl with a healthy serving of mixed greens, roasted broccoli, roasted rainbow carrots, handful of pepitas, handful of dried cherries. Then top with the goddess dressing and mix your bowl thoroughly. Once tossed to you liking in dressing, top with the amount of falafel balls you would like and enjoy!
