Vegan Alfredo Pasta
This is one of my ovulatory phase staples - it is easy, light, and pretty damn good. The Primal Kitchen dairy-free alfredo sauce is definitely the star of the show and you’ll keep coming back for more. Plus, it makes plenty for lunch time leftovers!
In my recipes, you will notice that I don’t provide super explicit measurement guidance. I am a big believer in portioning based on what feels right for you, and learning to experiment with your cooking.

Ingredients
2 boxes Banza Pasta shells
Zucchini, diced
Bell pepper (yellow or orange), diced
Broccoli, cut into florets
Cauliflower, cut into florets
Field Roast Spicy Chipotle vegan sausage, 2 sausages diced
Garlic
Pinch of salt and pepper
Instructions:
Prepare the vegetables. Dice the zucchini and bell pepper into small pieces and put off to the side. Then cut the broccoli and cauliflower into florets.
Put the zucchini and bell pepper in a deep pot, and begin to sauté with light olive oil, garlic, salt, and pepper- this will take about 10 - 15 minutes, or until they are browning. Place the broccoli and cauliflower in a pan with a thin layer of water and begin to steam them - this will take only about 5 minutes. You want the broccoli and cauliflower to be cooked, but not too soft, so that they will hold up in the pasta.
While the vegetables are cooking, chop up the vegan sausage into nice, bite-size pieces. When the bell pepper & zucchini are about 5 minutes away from being done, add the vegan sausage to the pot and sauté.
Also while the vegetables are cooking, cook the Banza pasta according the package instructions. When the noodles are ready, strain them and run luke warm water over top to stop them from cooking further & preventing the noodles from getting mushy.
Once the vegetables and vegan sausage are all ready, add the broccoli and cauliflower to the deep pot. Add one container of Primal Kitchen vegan Alfredo and stir. Once fully stirred, add the noodles and the second jar of vegan Alfredo to the pot.
Once everything is combined, feel free to cook on the stove pot to bring back up in temperature if the noodles cooled. And enjoy!
