Comforting Coconut Curry

We love, love Indian food in our household and while this isn’t as epic was what I want to order in, its about as good as it gets for a healthy weeknight meal! A great flavor combination that is simple and easy for a busy night.

In my recipes, you will notice that I don’t provide super explicit measurement guidance. I am a big believer in portioning based on what feels right for you, and learning to experiment with your cooking. I don’t measure out spices for example - I season and taste as I go. It has helped me build my cooking confidence, and it will for you too!

Ingredients

  • Brown rice

  • 1 can chickpeas

  • 1 sweet potato, diced

  • 1 cauliflower, cut into large florets

  • 1 orange bell pepper, diced into large chunks

  • 2 jars Maya Kaimal Kashmiri Curry sauce

  • Garlic

  • Pinch of salt & pepper

  • Olive oil

Instructions

  1. Start with the brown rice, as it usually takes about 40 minutes to cook. You choose how much brown rice you want to cook - we make way more than we need so that we have leftovers prepared for the week.

  2. Then prepare the sweet potato - dice the sweet potato into cubes, toss in olive oil and garlic, begin to sauté on the stovetop in a pan. Cover the sweet potato intermittently with a lid to help it cook through & soften. Once it is starting to soften you can remove the lid and allows the sweet potato to brown. This usually takes about 10-13 minutes.

  3. Then prepare and cook cauliflower & bell pepper. Cut the head of cauliflower into large florets and dice the bell pepper into large chunks. Toss the cauliflower and bell pepper in olive oil, garlic, salt and pepper, and begin to sauté in a new pan. This also usually takes about 10 minutes.

  4. Once the sweet potato, cauliflower, and bell pepper are cooked, combine into one pan. Open the can of chickpeas, drain, and add into the pan with the vegetables. Then add the two jars of Kashmiri Curry and simmer for ~5 minutes.

  5. Time to assemble and enjoy! Plate your bowl with your desired portion of brown rice and top with the veggie curry mix.
